Black Bean Burgers
- 3 16-oz cans black beans -- rinsed & drained
- 1 1/2 cups uncooked oats
- 1 large onion -- chopped
- 3 jalapeno peppers -- chopped
- 3/4 cup chopped fresh cilantro
- 1 teaspoon sea salt
- 1/4 cup oat bran
- 1 tablespoon olive oil
- Coarsely mash beans with a fork.
- Combine all the ingredients.
- Shape into 8 patties.
- Cook patties in hot oil in a large non-stick skillet over medium-high heat for 5 minutes on each side or until lightly browned.
- Drain on paper towels.
- Serve on lettuce leaves, or slices of tomato.
